These are a few pictures of canapés-with-a-Scandinavian-twist (smørrebrød) from a recent Norwegian Independence Day (Syttende Mai) dinner. They were cute and tasty so I think I’ll add them to my list of Regulars.
From the outside in:
- Smoked Pork Tenderloin with Parsley Shallot Butter and Star Anise Pickled Red Onions on Roasted Garlic Baguette
- Pickled Asparagus with Anchovy Butter and Shredded Egg Yolk on Pumpernickel
- Applewood Smoked Shrimp with Lemon Dill Cream Cheese on a Sourdough Crostini

Apple wood was a nice mild wood for smoking the shrimp. It was tricky to not oversmoke, overcook OR undercook the shrimp—any of those results would not have been fun. Fortunately for everyone the results were quite fun and tasty.

This is the Starter Course from the same group’s heritage celebration two years ago. I made Salmon Gravlax for the little egg boat (traveling to the New World), served with Salmon Roe, Dill and a Mustard Sauce. I suppose the bed of dill is the seaweed through which they had to sail….
All this and I’m not even Norwegian! But it’s fun to dive into cultural foods.

Oh….. I thought you wrote “s’more bread”… as in roasted marshmallows, melted chocolate and graham cracker bread. Silly me. These look too beautiful to eat!
