Gluten Free Kimchi Pancakes

 

Do you need more ways to use your big batch of kimchi?  A surprisingly savory and cute appetizer?  A snack for your next road trip?  Here is an easy savory treat that makes me happy.

Kimchi is the traditional Korean side dish of fermented vegetables—many veggies can be used but often napa cabbage, green onions, radishes, ginger, chiles and garlic are the stars.  The fermentation means it’s loaded with healthy bacteria (lactobacilli) to keep you healthy, aid digestion, and make your gut and immune system very happy (read more here).  Not to mention it’s a salty/tangy/spicy pow of flavor that will liven up any meal.

I kept snacking on these throughout the day, they’re good hot out of the pan or room temperature.  I’m already getting the salivary gland squirt just thinking about making more.

 

There is some unmarked latitude line north of which people are grateful for snow and winter (because it’s fun and because their economies depend on it) and south of which people are grumpy about anything fluffy and cold.  We have now made the journey back across the line and are sorting through the mountains of neglected details (and making plans for next year).  Photos from the spontaneous last fling of a ski race coming next week…

Gluten Free Kimchi Pancakes

Prep Time: 10 minutes

Cook Time: 20 minutes

 

Whisk together in a bowl:

2 cups Kimchi, chopped

1/2 cup Kimchi Juice

1/2 cup Water

2 eggs

1/2 teaspoon Salt

Mix in:

1 1/2 cups Rice Flour

1/2 cup Tapioca Flour

Let sit for a few minutes. 

Fry in a heavy saute pan with:

Coconut Oil, Avocado Oil, or other favorite oil

Flip and cook the other side.

Eat warm or room temperature, and try with the Dipping Sauce.

 

Dipping Sauce

Use Tamari Sesame Dipping Sauce, or:

1/4 cup GF Tamari

1/4 cup Rice Vinegar

2 Tablespoons Sugar (unless using Seasoned Rice Vinegar, then don’t add any sugar)

2 Tablespoons Water

Other possible additions:

-Green Onions

-Sesame Seeds

-Sesame Oil
