Fried Cauliflower with a Curry Dip

 

How many times have we eaten from street food carts or food trucks, utterly wowed, then spent numerous attempts to re-enact the scrumptious experience? Usually it involves frying and serving with a greasy dip, and is never quite the same as the edible encounters on the boulevard.

At a business anniversary party in Minneapolis a few years ago we munched fried cauliflower with a curry dip from a food truck they had hired for the event. We couldn’t stop talking about it and vowed to make it when we got home. How one matches memory with re-creation of the memory is not always a science but sometimes the results are pretty good.

 

Not wanting to deal with the messiness of deep frying we went the scaled down version using a cast iron pan and a fair amount of coconut oil. I’ve read about and tried lightly blanching the cauliflower before frying it. It fries faster but you need to make sure the cauliflower is dry before putting it into a pan with hot oil.

 

 

Enjoy a little albino fried brassica!

 

Fried Cauliflower

Prep Time: 15 minutes

Cook Time: 15 minutes

 

Slice in 3/4 inch slices

Cauliflower

Heat to high heat in a heavy sauce pan

Coconut Oil, around 1/8 of an inch in the pan

When the pan is hot carefully place the cauliflower in the pan, maybe use tongs so the splattering grease does not burn you.  Cover the pan to prevent more splattering.

After a few minutes, when light or medium brown crisp on one side, turn the cauliflower over.  Fry until a light brown crust covers the pieces. Remove from the pan and place on a paper towel. 

Sprinkle with:

Salt and Pepper, to taste

Eat right away with the dip! 

 

Curry Dipping Sauce (one version of it, anyway!)

Stir together in a small bowl:

1/4 cup Mayonnaise

2 Tablespoons Plain Yogurt

1 teaspoon Prepared Mustard

3/4 teaspoon Curry Powder

Tiny Pinch of Cayenne

 

 

 

We have been celebrating our father’s 90th birthday and came across this image in the piles of old photos. My great grandfather is standing in front of a school bus assembled by his son, my great-uncle. The body was from a horse-drawn bus called a ‘hack’ and placed on top of a truck chassis. My great-uncle went on to start a charter bus company, no surprise after seeing this creative project.
