Dairy Free Chocolate Mousse

 

I’ve been perusing recipes lately, books on the shelf and the random pieces of paper with notes scribbled on them that are stuffed in the books or in my folders labeled “Recipes”. I’ve had this piece of paper for a while, I have no idea who gave it to me or where it’s from but it looked intriguing. Nearly everything with chocolate could be called intriguing, yes? I searched online to find a source for this delectability—it’s very possibly from Renée Loux — cookbook author, Clean Food writer and TV host. I may need to write her a thank-you letter.

 

Is WOW a strong enough word??

This is the most luxuriously rich, intense, and creamy dessert for which you could hope. The avocado and coconut oil give it a silky texture and the bold quantity of cocoa makes it a potent treat. Eat it as a mousse with whipped cream or coconut cream and berries, or as a frosting, ganache or filling. Or just dip your finger in it and enjoy.

 

 

The additions of balsamic vinegar and tamari are an interesting twist and provide a little edge that I love. The thick aged Balsamic is ideal, or cook down balsamic vinegar into a syrup, or just use your favorite balsamic vinegar—the idea is to give some tart-depth to the chocolatey sweetness.

Napa Valley 25 Star Balsamic Vinegar is an inexpensive aged balsamic that is mighty tasty and can be found in most co-ops and health food stores. We’ve been eating it with everything lately–vegetables, tea, ice cream…there is very little that would not go well with aged Balsamic.

Dairy Free Chocolate Mousse

Prep Time: 15 minutes

 

Blend together in a food processor:

2 Avocados

1/2 cup Maple Syrup

2-4 Tablespoons Sugar

2 Tablespoons Coconut Oil

2 teaspoons Vanilla

2 teaspoons Aged Balsamic Vinegar, reduced Balsamic, or good quality Balsamic Vinegar

1/2 teaspoon Tamari

Blend until smooth and creamy:

1 cup Cocoa powder, sifted

 

Garnish with berries and mint, or use as a frosting or ganache. 

 

 

 

 

Monkey Puzzle tree! We came across them in the Olympic peninsula and had to investigate. The species has been around for at least 200 million years, a tree can live up to 1,000 years, and they are fire resistant so are able to survive in volcano country. We are surrounded by amazingness.
