Asparagus with Curried Honey Mustard Vinaigrette

 

A Springtime Soirée.

My friend Patsy and I have a little tradition of setting a date then seeing what we have in our fridge, freezer, or pantries to create an evening of delicious Small Bites. It might be a cup of pintos, salmon, broccoli, olives, soup, cheese…even when it feels like I have nothing special to bring somehow between us the combination of treats works perfectly together. It’s amazing what abundance can happen when sharing. Without fail they have all been delicious meals, though some have been particularly spectacular.

 

This was one of those particularly spectacular meals. The timing was perfect for us both as early spring can be grey, muddy, and bleak before the obvious signs of life are visible. Lobster tails, an orange wild rice salad, asparagus with a curried honey mustard sauce, and creme brûlée for the conclusion of the evening…I don’t even need to say it but I will: it was divine. We enjoyed the evenings for at least five hours with copious amounts of laughing, eating, and all around good hygge.

Asparagus with Curried Honey Mustard Vinaigrette

Prep Time: 15 minutes

Cook Time: 4-8 minutes

 

Wash, then slice off the tough ends of: 

1 pound Asparagus

Steam or blanch the asparagus 4-8 minutes depending on the amount, thickness and preferred doneness. 

 

Whisk together: 

1 Tablespoon Mustard—Dijon, Yellow, or your favorite

1 Tablespoon Honey

2 Tablespoons Champagne or White Wine Vinegar

1/2 teaspoon Curry powder of your choice

Drizzle in while whisking until emulsified:

1/4 cup Olive Oil

.

Plate the steamed asparagus and drizzle with the vinaigrette. 

Topping ideas:

  • Toasted Hazelnuts or Walnuts
  • Hard Boiled Egg, chopped
  • Fresh Dill and Parsley
  • Edible Flowers

 

 

 

Every spring my sisters and I converge for a long weekend of hanging out, eating, laughing, and whatnot.
