Orange Ginger Slaw

A colorful and tasty salad for your dinner, yes, but first I need to show you a large grey cat.

I’m thinking of making a t-shirt or a poster of these paws, they’re perfect.

 

Scott and I were devoted dog lovers and this big dork of a cat showed us there could be another way, transformed our hearts.  Scott’s collies rescued a starving wisp of a kitten fourteen years ago and became surrogate mothers for the tiny grey orphan who then proceeded to take over our lives in the role of Sultan, a gravity-generating mass of fur.  My sister wrote “that sweet little doorknob bean-head cat…the clunky jester…such endearing and frustrating idiosyncrasies…”, he was a huggable and sometimes strangle-able squash-and-fruit-loving feline that stole the show.  He was also part of one of the best cat-love-stories around, maybe that I’ll share another time.

 

Eeyoo passed away peacefully a few weeks ago, it’s amazing how empty space is so noticeable.  You really don’t know how you will miss anyone until you do.

Try this beautiful salad with the brightness of orange and ginger, it’s good for a hot summer’s evening or a holiday spread.  Our local cabbages are in full season, they’re sweet and abundant at the market.  Tis a good season for eating.

 

Orange Fennel Slaw

Prep Time: 20 minutes

 

Make the dressing:

1/3 cup Orange Juice Concentrate

2-3 Tablespoons Olive Oil or your oil of choice

Juice of 1/2 Lime

1 teaspoon Ginger, grated

1 Tablespoon Honey

Salt and Pepper

Toss the dressing with:

1 head Red Cabbage, shredded (or use red and green together)

1-2 Carrots, peeled and grated

1 small head Fennel, shredded

1/3 cup Craisins

Taste and Adjust.
